Come on In , Cool Off!

Bargains 603

A few short months ago we were covered with snow, and now it is HOT!  The gkids aren't bothered by the heat, they spend most of the day in the water!  This is the Peconic Bay, a beautiful private beach by our home.  There were some jelly fish, so we keep the bottle of vinegar on hand.  Nothing is perfect!

This is the ocean,  we were there last Sunday.  A lot rougher, and watch those rip tides.  The Bay is a lot calmer!

I hope your Fourth of July holiday was a good one!

When I did my Lemon Yellow table, I thought I would carry through with a Lemon chicken for dinner.

I buy the boneless breasts , (cheaper :)  )  and slice them thin myself. Pound them thinner, and season.

Dredge in seasoned flour, and brown in a small amount of evoo, or  a mixture of butter and margarine.  Remove from the pan and keep warm.

Slice some scallions thinly and saute in the same pan.  Deglaze the pan with some dry white wine and fresh lemon juice.  Add some chicken broth, or use chicken base, Tone's or McCormick, mixed in some water.  Grind in some pepper. Simmer.

Return the chicken to the pan, and add some fresh parsley and heat through.  The sauce should not be watery, so if it is, thicken it a bit.

Right before serving , swirl some  cream or half and half into the pan.

I served it with linguine tossed in olive oil and cooked  and seasoned spinach with some freshly grated locatelli cheese.

Some people add capers to their piccata, but I find them too salty.

Hope you have a great weekend .  Stay cool and enjoy!

As always, I appreciate your visit!

(If anyone has an ipad , are you able to use it to comment on blogs?  I keep getting that sign in thing over and over, telling me my password is wrong!  Anyone know what to do?  )

I am joining Gollum for Foodie Friday.

  1. Kathleen, the beach looks like the place to be. ;-)
I'd be happy to join you for that delicious lemon chicken.

  2. My-oh-my....does that look yummy. Beautiful table too!

  3. There are some very lucky people in your household. They get to play on these amazing beaches and then head home to an absolutely fabulous meal.

  4. I love your beach both ocean and bat! I also love your chicken piccata recipe! I never added cream to mine but your chicken sauce looks so nice and glossy. I'll try that next time.

I have an I Pad and haven't had any problems commenting on blogs. Did you uncheck the box that say "stay signed in" when you put in your e-mail and password? That seemed to help the problem we were all having with commenting on blogs a month ago. Do you use 4G service? It could be that you aren't getting a strong signal. Hope it clears up soon!

  5. I love your beach!!!!! Love your table and dinner looks wonderful:)

  6. What a beautiful beach! And your table is gorgeous! I need to make this chicken mouth is watering (and it's 3am!)

  7. This is my kind of dinner! I keep saying I'm going to try Chicken Piccata but haven't yet, maybe this time:@)

  8. Vinegar for jelly fish...good to know. If things were perfect sand wouldn't get in your food at the beach either! :0)
    You dinner looks delicious...

  9. It seems like the last 2 years there have been a lot more rip tides, doesn't it? It makes me nervous now that the kids are big and going in on their own!! Your table is so pretty and dinner looks delicious! Have a great weekend!

  10. I am so ready for a trip to the beach! How nice to have it close by. Love this yellow lemon table and that chicken looks sooooo good!
    hugs, Linda

  11. Yum, I will be trying this recipe for sure. I love anything with lemon as an ingredient. Really liked the tablescape also.

  12. Is that you catching some zzzz's on the beach? Beautiful shots, I like the Bay much, much better when my kids were small.

  13. That bay looks wonderful! Water is the only place to keep cool during these hot summer days! I love the pool and the lake!

  14. What a delicious looking meal! I've made chicken piccata many times but, like Pat, never added the cream at the end. Will do so next time, as its DH's favorite way to enjoy chicken.

The beach photos make me long for FL. How fun to have it so close & easily accessible for you. Ours was only a 10 min. drive. *sigh* I used to take a cuppa tea & a bagel & go run the sand some mornings. *double sigh*

Gotta go look up "locatelli" cheese, now. I learn SO much from you, Kathleen. Thank you!

  15. Hi lovely lady.

  17. Oh my, does this sound yummy!!! I will be making this! Thanks!!!! XO, Pinky

  18. Hi Kathleen, your beaches are beautiful. We stopped going to the Outer Banks (NC) when the kids got bigger because of the strong rip tides there, and switched to the bay side of Cape Cod. I always like bay sides because of the sand flats when the tide goes out. Your chicken piccata recipe looks so easy and delicious! I'm doing a lemon chicken with basil for On the Menu Monday. Hope it looks as good as yours! Linda

  19. Kathleen, I will not see the beach this summer and yours looks so wonderful. Love your lemon chicken recipe, it is light and fresh. Joni

  20. I think I would enjoy lounging on the beach here, Kathleen! And I know I would definitely enjoy eating your chicken piccata. Your sweet yellow table looks as if it stepped right out of the 50's- so nostalgic and comfortable!!
I'm staying busy with a new project but am still getting out to have a little fun w/the husband and- next week- the Buckeye Bloggers for our little get-together. Hope all is well on your end- ♥ Sue

  21. Beautiful beach and chicken. Love your lemon tablescape! Happy weekend!

    IPOD but I LOVE IHOP.....:)

  24. Oh to be at the lake or beach when it's hot! How lovely your tablesscape looks and the lemon chicken looks delicious and easy to make.
Are you still at the lake? I'm on my way there to cool off. LOL
    Have a great weekend.

  25. Beautiful beach and the water looks very clear! I'm guessing the vinegar is used for jelly fish stings? I think I'll stick to pools anyway.

I'm saving your lemon chicken recipe - it sounds delicious! Love the cool yellow table for this warm weather too.

  26. I'd love to be on your beach right now :-) We are enjoying a beautiful day here too. The chicken looks great. Perfect for a summer meal.
